I love "Cream of" Soups. Here's a family favorite. The chiles give this soup it's zesty taste. Serve with whole wheat crackers.

 

1 c. finely diced onion

1/4 c. veg. broth

3 c. fresh or frozen corn

2 Tbl. Diced canned green chiles

2 c. non fat milk

 

In saucepan, combine onion and veg. broth. Bring to simmer, covered, until onion is soft, about 5 minutes. Add remaining 2 1/2 c. corn and milk. Bring to boil. Cover and simmer until corn is tender, about 5 minutes. Puree in blender until smooth. Stir in corn/chile mixture.
