Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 This is great served over brown rice. 1 c. veg. broth 1/2 c. chopped onion 2 garlic cloves, minced 1 (28 oz.) can diced tomatoes 1 lb. frozen okra, slices 2 Tb. chopped oregano 1/2 tsp. balsamic vinegar In sauce pan, combine broth, onion and garlic. Bring to simmer for three minutes. Stir in tomatoes, okra, oregano, vinegar. Return to simmer, cover, and reduce heat to low. Cook until okra is tender, about 8 minutes. Blessings, Karla B.
