Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 Vegetarian, Low-Fat Golden Zucchini And Orzo nonstick cooking spray q tsp. olive oil 2 garlic cloves, minced 1/2 c. minced onion 1 c. orzo 2 1/3 cs. water Salt to taste 2 golden zucchini, (1/2 lb ea), cut 1 " pieces 3 tbsps. minced dill 1 tsp. grated lemon peel 1/4 c. toasted pine nuts Spray medium saucepan with nonstick cooking spray and add olive oil. Cook garlic and onion in saucepan over medium-low heat until onion is tender, about 2 minutes. Stir in orzo and cook and stir about 1 minute. Stir in water and 1/2 teaspoon salt. Increase heat to high and bring to boil. Reduce heat to simmer, cover and cook until orzo is tender, about 12 minutes. While orzo is cooking, steam zucchini or squash in steamer basket over boiling water until tender, about 15 minutes. Stir cooked squash into orzo. Stir in dill and lemon peel. Season to taste with salt. Serve with sprinkle of toasted pine nuts. Makes 4 servings. Calories...177...Fat...7 g...Carbs...26 g...Protein...7 g ....Sodium...377 mg...Fiber...1.2 g.
