Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 Vegetarian Hot Pickled Vegetables TNT 4 ozs. green beans, whole 3 celery stalks cut 2 X 1/4 inch strips 1 c. carrots, 2 medium, cut in thin slices 1 1/2 cs. cauliflowerets 1 c. broccoli flowerets 1 c. pearl onions 1/2 c. peppers, serrano or jalapeno or a mixture of both 1/2 c. coarse salt 2 cs. cider vinegar 2 cs. water 2 tbsps. black peppercorns 1/4 tsp. cloves, ground Mix all ingredients in a large glass or plastic container. Cover and refrigerate at least 48 hours but no longer than 2 weeks. Makes about 10 cups of vegetable relish. These are very good, the longer you keep them the hotter the get.
