Guest guest Posted July 15, 2001 Report Share Posted July 15, 2001 Just passing along my own experience with avocadoes! The best kind of avocado to buy is a Haas - smooth skinned. To use them they should yield to light pressure - if they are hard they are not ready to eat. Ripen them on the counter, not in the fridge, and they will ripen a little more each day. They should be greenish on the inside - some yellowing is o.k. Once they are ripe, you can keep them from ripening anymore by putting them in the fridge. I cut them in half and then scoop out the pulp - the pit should come away easily if they are ripe. If you make guacamole or anything else with them, try making it just before you eat it or it will turn brown in colour and not look very appetizing. Won't kill you, though! Adding some lemon juice will help prevent the browning but won't stop it. That's all I can think of for now - hope this helps!
