Guest guest Posted July 10, 2001 Report Share Posted July 10, 2001 Orange-Apricot Barbecue Tofu Preheat oven to 350 degrees F. Slice into 1/4 " slices and lightly fry 1 pound of firm tofu. Arrange the fried slices in a baking dish. Saute the following together until transparent: 1 Tbsp. oil 1/4 cup onions, chopped Stir in: 6 Tbsp. apricot jam 6 Tbsp. frozen orange juice concentrate 5 Tbsp. water 2 Tbsp. prepared mustard 1 Tbsp. vinegar 1/2 tsp. coriander 1/2 tsp. salt 1/2 tsp. ginger 1/8 tsp. garlic powder A pinch of cayenne pepper Pour the sauce over the tofu and bake 10 - 15 minutes, until bubbling.
