Guest guest Posted July 10, 2001 Report Share Posted July 10, 2001 Vegetarian Miso Soup 1/3 cup dark miso 1/2 pound tofu, cut into 1/2-inch cubes 1/4 cup minced carrots 1/4 cup peeled and minced scallions Bring 6 cups of water to a boil in a saucepan. Turn heat to low, and mix about 1/2 cup water with miso in a blender. (This is the real trick--to keep it from being grainy.) Blend until smooth. Pour miso mixture back into simmering water, and add the tofu and carrots. Turn off the burner. Stir twice and let the mixture sit just long enough to heat the tofu through. Add scallions and serve.
