Guest guest Posted July 10, 2001 Report Share Posted July 10, 2001 HOLIDAY SALAD 1½ cup pomegranate seeds and any excess juice 2 avocados, peeled and cubed 2 oranges, peeled and cubed 2 heads of butter or bibb lettuce DRESSING 2 tablespoons white wine vinegar 1 egg yolk or ½ teaspoon Dijon mustard if you prefer balsamic vinegar olive oil to emulsify (Flavorful Extra Virgin is best) Prepare the dressing by combining the vinegar and egg yolk with a fork. Let stand for five minutes. Add a dash of Balsamic vinegar. Just before you are ready to serve, whisk in olive oil to your preferred consistency (aprox. ½ cup). Season with salt and white pepper, if desired. For the salad, arrange the washed and dried lettuce on eight plates. Combine the other fruit in a bowl, and toss with the dressing.
