Guest guest
This recipe had rave reviews last night -- it was sooo good! We had cooked apples with it (cinnamon and some sugar) and my 3yo passed up the apples just to eat the squash. DH doesn't like squash so I served the stuffing as a 'side' dish for him. I used FF cooking spray to brown the sausage. From www.fatfree.com Apple and " Sausage " Stuffed Squash (serves 2) 1. Cut an acorn or butternut squash in half, scoop out the seeds and stringy parts, place the halves cut-side-up on a cookie sheet, cover with foil, and bake at 350 til the squash is tender (it took an hour for 4 halves) 2. In a bowl, mix together (in whatever ratio you desire): Gimme Lean: use 'sausage' flavor (this is a vegan product) Cooked Brown Rice Diced Onion (I used vidalia, I don't like regular onions) Chopped Apple Sage, Thyme, rosemary, or any herb that sounds good. 3. When squash is tender, take the foil off and stuff the halves generously. Return the stuffed squash to the oven and brown on top (around 10 mins). ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Bridget in SC * Bridget http://sahmu.com founder -- Come Enter Our Contest! http://GuaranteedHomeBusiness.com -- How to Work From Home Only 30% of the 17,000 chemicals have been tested for their negative effects on our health.
