Guest guest Posted July 9, 2001 Report Share Posted July 9, 2001 Summer Basil Salad with Fresh Basil Dressing Dressing 1/2 C. finely chopped fresh basil 1/4 C. olive oil 2 T. fresh lime juice 2 T. fresh lemon juice, squeezed 1/4 C. dry white wine Salt and freshly ground pepper to taste In a small bowl mix all the ingredients until blended. Salad 1 sm. green bell pepper, seeded and cut into julienne strips 1 sm. red bell pepper, seeded and cut into julienne strips 1 sm. carrot, peeled and cut into julienne strips 1 sm. yellow squash, cut into julienne strips 4 cups thinly sliced bok choy 2 C. halved snow peas, blanched and patted dry 1 sm. cucumber, cut into julienned strips 6 oz. fresh mesclun greens In a large serving bowl, toss together all vegetables.
