Guest guest Posted July 6, 2001 Report Share Posted July 6, 2001 Vegetarian, Diabetic Sweet Potato Rice From; Vegetarian Cooking For The Diabetic 2/3 c. raw rice 2 cs. water 2 tbsps. parsley; chopped 1/4 tsp. xage 1/2 c. sweet potato; cooked and mashed 1/4 tsp. pepper 1/4 c. wheat germ 1 tbsp. yeast, Brewers (nutritional) 4 ozs. yogurt Cook rice over low heat for 40 min in 2 cups water. Stir in and heat throughly the parsley, sage, sweet potato, pepper, wheat germ, and Brewer's yeast. If desired, serve warm or cold with yogurt ( add 1/2 milk exchange). Makes 2 servings.
