Guest guest Posted July 4, 2001 Report Share Posted July 4, 2001 Green Pea Picnic Salad WW Points: 3 1 pound frozen green peas 1 medium Kirby cucumber (for 3/4 cup chopped) 2 cloves fresh garlic 1/4 cup fresh basil leaves, optional 1 medium red bell pepper (for 1 cup chopped) 1 small onion (for 1/2 cup chopped) 2/3 cup light sour cream 1/3 cup light mayonnaise Juice from 1/2 a lemon ( 2 tablespoons). 1/2 Teaspoon salt, or more to taste 1/4 Teaspoon pepper, or more to taste Place peas in a colander and run cool water over them to thaw. St aside to drain well. Cut the cucumber and place it in a 2 quart or larger bowl. Peel and finely mince the garlic. Adding it to the bowl. If using basil, chop the leaves and add them to the bowl. Seed and chop the pepper, adding it to the bowl as you chop. Peel and chop the onion, adding to the bowl as you chop. Add the wour cream, mayonnaise, lemon, salt and pepper to the bowl. Stir well to mix with the vegetables. Add the green peas and toss to coat and mix well. Serve at once or cover and chill 24 hours. Makes 5 cups.
