Guest guest Posted July 4, 2001 Report Share Posted July 4, 2001 Hello everyone *** " CHICKEN " TOFU NUGGETS *** 1 container firm tofu 1 box of Shake 'n' Bake Tofu-based mayonnaise Cut the tofu into 1-inch cubes. Put mayonnaise in a bowl and stir till it is soupy. Put Shake 'n' Bake mix in the plastic bag. Dip a cube of tofu in the mayonnaise on each side. Drop the cube in the bag and shake it. Do this for each cube, coating all sides. Place on a baking sheet and bake at 350 degrees for about 15 minutes. Serves: 4 " Chicken " flavor Shake 'n' Bake has no animal ingredients. *** CHEESECAKE ALA TOFU *** 4 oz. honey graham crackers 2 tablespoons olive oil 1 cup pineapple juice 2 tablespoons gelatin 1 pound silken tofu 6 tablespoons honey 6 tablespoons freshly squeezed lemon juice 1 1/2 teaspoons grated lemon peel Crumble the graham crackers, add olive oil and mix thoroughly. Press the cracker mixture into a lightly greased 9-inch pie pan evenly. Bake crust for 10 minutes at 350 degrees and allow it to cool. Bring pineapple juice to a near-boil. Stir in the gelatin gradually and simmer until it is dissolved. Cool for at least 10 minutes. Combine remaining ingredients in blender with the pineapple juice mixture. Pour into the baked crust.
