Guest guest Posted July 3, 2001 Report Share Posted July 3, 2001 Vegetarian, Low-Fat Vegetable Stew (high fiber) TNT 5 potatoes, peeled, chopped 4 onions, chopped 5 carrots, sliced 48 ozs. tomato Juice 28 ozs. tomatoes, cut up 1/2 bag frozen Okra 1 c. barley 1 1/2 cs. frozen Corn 1 c. frozen Peas In a large kettle, combine first 7 ingredients. Bring to boil; lower heat and simmer about 30 min. In the meantime, cook the barley according to instructions on bag. Add barley, corn and peas to soup mixture and simmer 15 minutes more. Don't overcook. Can be stored in refrigerator 1 week, or frozen as desired. Makes 8 good size servings.
