(Authentic) Chummus 2 c. dried chickpeas water 3/4 c. lemon juice 1 c. techina 1 T. salt 10 or more cloves garlic Cover chickpeas with water, plus an extra inch or two. Soak chickpeas for 8-12 hours. Or bring to a boil, boil 2 minutes, and soak for 1-2 hours. Cook chickpeas until very soft--at least 45 minutes. Drain, saving water. Place chickpeas in food processor while still hot. Add remaining ingredients, plus about 1/2 c. reserved water. Grind until smooth, adding extra water as needed. (This can be made very thick, then frozen. When you thaw it, add water to get the texture you want.) This makes quite a bit, and freezes very well. Brandel in Jerusalem P.S. Do not add salt to chickpeas when soaking and cooking; they don't cook as well. And don't add baking soda because it destroys the B vitamins. If you want your chickpeas as soft as the ones you buy canned, you have to use a pressure cooker (which I've never done, but I hear it works).
