Guest guest Posted June 10, 2001 Report Share Posted June 10, 2001 If you have access to lots of fresh mint here is a recipe for mint flavored vinegar. I use it to marinade cucumber slices for salads or sandwiches. Mint Vinegar 2 cups packed spearmint 1 quart cider vinegar 1 cup granulated vinegar Pick the tips off the mint plants (say 2 " from top) and wash lightly. Dry without bruising. Combine with sugar in a large heat proof bowl. Bring vinegar just to boiling point, remove from heat and pour over mint and sugar. With a wooden spoon press the mint leaves. When cool cover and marinate in a warm room for 10 days, stirring daily. Strain and pour into bottles with a fresh mint leaf. Quote Link to comment Share on other sites More sharing options...
