Guest guest Posted June 7, 2001 Report Share Posted June 7, 2001 Vegetarian, Diabetic Light & Easy Guacamole (no exchanges) 1 2/3 c. frozen peas, thawed (8 oz.) 1 avocado, peeled and pitted 2 tomatoes, large, peeled, seeded and chopped 2 garlic cloves, minced 1/4 c. red onion, minced 2 tbsps. lemon juice, fresh 1 tsp. chili powder 1/2 tsp. salt 1/2 tsp. cumin, ground 1 pinch cayenne pepper In food processor, puree peas until smooth. In bowl, mash avocado with fork, add peas, tomatoes, garlic, onion, lemon juice, chili powder, salt, cumin and cayenne pepper; mix until blended. Serve with crudites, Belgian endive leaves or baked tortilla chips. Makes 2 cs. Calories per 2 tbsps...41...Fat...2 g...Carbs...5 g...Protein...1 g...Sodium...99 mg...Fiber...1 g.
