Green Herb Rice

 

Ingredients:

 

1 bunch scallions

1 bunch spinach

1/2 cup parsley

1/2 tsp. dried marjoram (or 2 Tbsp. fresh)

1 tsp. dried dill (or 2 Tbsp. fresh)

1 Tbsp. margarine

1 tsp. salt

1 cup white basmati rice

2 cups water

1/8 tsp. pepper

 

Instructions:

 

1. Clean scallions, spinach, parsley and fresh herbs (if using) and finely

chop.

2. Saute these in a saucepan with the margarine. When wilted, add rice,

water, and remaining seasonings. Bring to a boil and lower to a simmer.

Cover and cook until water has been absorbed, about 20 minutes. This works

well as a side dish, or a light dinner.
