Guest guest Posted June 6, 2001 Report Share Posted June 6, 2001 Sweet and Sour Tofu 3/4 c. pineapple juice (saved from can of pineapple--below) 1/3 c. vinegar 2 T. soy sauce 1/4 c. pineapple juice concentrate 1/4 c. tomato paste 1/2 T. ginger 2 T. cornstarch 1 T. oil 1 large onion, sliced in half-moons 1 large pepper, coarsely chopped 1 lb. mushrooms 2 lb. tofu 3/4 c. pineapple chunks Mix first 6 ingredients. Add to cornstarch, mixing thoroughly. Set aside. Heat oil in large wok. Add vegetables and tofu. Stir fry for about 10 minutes. Add sauce and pineapple.
