I'll let you decide the proportions. My meat eating husband said these were the best chalupas he'd ever eaten! This is very quick and the avacados are cheap right now, so enjoy! 1 can refried beans chalupa or tostada shells avocados-mashed tomato - diced spinach (fresh) - washed & chopped lemon juice, salt & pepper white Mexican cheese slices (like asadero, queso,etc.) Heat oven to 350. In a bowl, mash avocado and mix in diced tomato. Add salt, pepper, and lemon or lime juice to taste. Mix well. Spread chalupa shells with refried beans straight out of the can. Place on a baking sheet. Place one slice of white cheese on each chalupa. Heat for 5 minutes or until cheese melts. Remove from oven and sprinkle with chopped fresh spinach. Put about 1-2 Tablespoons of avocado mixture on top of each chalupa. Serve with picante sauce or tabasco for more kick. Yummy!
