Guest guest Posted June 3, 2001 Report Share Posted June 3, 2001 SPICY WHEAT PILAF Ingredients: 2 tablespoons olive oil 1 onion - chopped 200 g mushrooms - sliced 120 g frozen peas 1 * cups burghul * teaspoon ground cumin * teaspoon ground cardamom 1 teaspoon garam masala 3 teaspoons coriander seeds 1 * teaspoons ground turmeric * teaspoon chilli flakes 2 cups vegetable stock * cup chopped fresh coriander * cup currants 1 cup roasted unsalted cashews Method: 1. Heat oil, add onion, mushrooms and peas. Cook over medium heat until onion is soft. 2. Add burghul and the spices. Stir and cook for 2 minutes until well mixed and fragrant. 3. Add stock. Bring to boil, then reduce heat to low. Cover and cook for 15 minutes. 4. Remove from heat and stir in the chopped fresh coriander, currants and cashews. Note: Burghul is also known as cracked wheat or bulghar. * vary to taste This is delicious served hot or cold!
