Guest guest Posted June 3, 2001 Report Share Posted June 3, 2001 1 Large Onion, Coarsely chopped 6 cups water 3 potatoes, peeled & chopped 1 tablespoon soy sauce 2 cups fresh spinach black pepper, to taste Place onion in a large pot with 1/2 cup water. Cook and stir until onion soften slightly. Add remaining water, potatoes, and soy sauce. Bring to a boil, reduce heat, cover and simmer until potatoes are tender. Add spinach and pepper. Cook just until spinach is tender. Puree soup in blender, (do it in batches if neccessary) Return to pan. Re-heat gently. *Notes: I find that it's easier to just scrub and chop the potatoes, rather than peeling them, especially as most of the nutrients are in the skin, and it's all going to get blended up anyways. Add in your favorite spices, too. For a little bit of a kick to it, add some Tabasco. I use Bragg's Liquid Aminos instead of Soy Sauce. This soup is really rich tasting while still low-fat.
