Guest guest Posted June 3, 2001 Report Share Posted June 3, 2001 Tofu Cream Cheese Frosting Yield: 2 1/2 Cups or enough for two 9-inch layers or a 9x13-inch cake Ingredients: 8 oz. tofu cream cheese, softened 1/3 C. Spectrum Naturals Spread or other non-hydrogenated vegan margarine 3 C. Veganized Powdered Sugar (see recipe above) 1 t. vanilla 1/2 t. almond extract Method: 1. Using an electric mixer or in a large bowl with a hand held mixer, place the tofu cream cheese and Spectrum Spread, and cream them together. 2. Add the sugar, vanilla, and almond extract, and continue to beat the mixture until light and fluffy.
