Guest guest Posted June 3, 2001 Report Share Posted June 3, 2001 SWEETCORN LOAF Ingredients: 440 g (8 ounces) can creamed corn * cup dried breadcrumbs * cup tomato paste 1 tablespoon fresh basil - chopped, or 1 teaspoon dried basil 2 cups cooked brown rice * onion - chopped 2 tablespoons parsley 1 tablespoon soy sauce Method: 1. Combine all ingredients 2. Lightly oil a loaf pan, and press mixture lightly into the tin. 3. Bake at 180°C (375°F) for 1 hour or until a rich brown color. 4. Turn out and slice to serve hot or cold. You can vary this recipe by adding * red capsicum (bell pepper), diced, and chopped fresh chili to taste. I usually bake it in a loaf pan and slice to serve, but it's also nice baked into individual serves in a large muffin tin - (that way you get lots more of the lovely golden brown crust!)
