Guest guest Posted May 25, 2001 Report Share Posted May 25, 2001 2 T vegetable oil 2-4 cloves garlic, minced 2 stalks celery, sliced 1 pepper, red or green, sliced 1 small onion, diced 2 green onions, diced ***Saute above for 2-3 minutes 6 cups vegetable broth 2 T lite soy sauce 1 T worchestershire sauce 1/2 - 1 dried chili pepper (to taste), finely chopped ***add and bring to a boil 4 oz cellophane noodles 1 cup bean sprouts ** add and simmer 3 min garnish with chopped cilantro or fresh spinach I was inspired by a recipe posted here and an old one of mine that called for beef. You could add some sliced tofu for the last simmer if you want but it is quite tasty as is.
