Guest guest Posted May 18, 2001 Report Share Posted May 18, 2001 Vegetarian Low-Fat Vegetable Mushroom Barley Soup (high fiber) 7 cups vegetable broth (canned is fine) 3/4 cup barley 4 cups sliced mushrooms 2 stalks celery, finely chopped 2 medium carrots, finely chopped 1/4 cup dry sherry (optional) 1 large onion, chopped 4 cloves garlic, minced 2 tablespoons soy sauce 2 tablespoons lemon juice Freshly ground black pepper In a large soup pot, bring broth to a boil; add barley. Return to boiling. Reduce heat, cover, and simmer 25 minutes. Add remaining ingredients. Return to boiling. Reduce heat, cover, and simmer 15 to 20 minutes, until vegetables are tender.
