Guest guest Posted May 13, 2001 Report Share Posted May 13, 2001 VEGETARIAN STRAWBERRY MUFFINS 1/4 pound butter 1 1/2 cups sugar 2 eggs 2 cups flour 2 teaspoons baking powder 1/2 cup of half and half 1 teaspoons vanilla 20 medium strawberries, chopped salt to taste In a mixer, beat the butter and all but 1/4 cup of the sugar until light and fluffy. Add the eggs one at a time. Blend well. Sift together the flour, baking powder, and salt. Add to the butter mixture along with the cream. Add the vanilla and fold in the strawberries. Fill greased muffin tins with the batter. Sprinkle the remaining 1/4 cup of sugar over the muffins. Bake in an oven at 375 degrees for 30 minutes or until lightly browned.
