THE COOKIE DRAGON’S CHOCOLATE CHIPPERS

 

100 g butter at room temperature, plus extra for greasing

4 tbsp sunflower oil

1 medium egg

1 tsp vanilla extract

1 tbsp molasses

225 g plain flour

½ tsp baking powder

½ tsp salt

75 g granulated sugar

55 g dark brown sugar

180 g chocolate drops

40 g broken pecan nuts

25 g raisins (if you like ‘em, I do!)

 

Preheat the oven to 190 ºC / 375 ºF / Gas 5. Grease 2 baking sheets with a

little bit of butter. Cream the butter and oil together in a large bowl with

a whisk until light and creamy. Add all the wet ingredients - the egg,

vanilla extract and molasses - and mix together.

In a large bowl, put all the dry ingredients - flor, baking powder, salt,

sugars, chocolate drops, pecan nuts and raisins (if you’re using them) - and

mix well with a big spoon.

Dribble the wet stuff on to the dry stuff and mix with a spoon. You’ll know

when you’re done mixing because you won’t be able to see any more white

flour in the bowl.

Put heaped tablespoonfuls of the mixture on to the baking trays, leaving

some space around each. Pat down with your finger to make them round

(neatness does not count!).

Bake in the middle of the oven for about 10 minutes until golden. Leave ‘em

to cool and eat ‘em all up (before anyone else can get their hands on ‘em).

Then make some more!
