First of all, I would suggest you shell as much as you can and throw them in the freezer. This will keep them fresh almost indefinitely. And...while you're looking for recipes, here's a great one that my mother used to make... Walnut Crescent Cookies 1 c. butter 1/2 c. sugar 1 tsp. vanilla (opt.) 2 c. flour 1 c. ground walnuts Cream butter and sugar. (Add vanilla, if using.) Add flour, then nuts. Add more flour, if needed. To shape, roll a teaspoon of dough into a log shape. Bend at the middle and flatten slightly. Bake 15 min. @350F/175C. Another great way to use walnuts is in a Waldorf salad. Chop apples and celery; add coarsely chopped walnuts (chopping walnuts by hand is best). Add mayonnaise mixed with a drop of cinnamon, cloves, and concentrated pineapple juice.
