Guest guest Posted May 9, 2001 Report Share Posted May 9, 2001 Vegetarian Apple Muffins 1 egg, well beaten 1/4 cup packed light brown sugar 2 tablespoons canola oil 1 cup low-fat milk or soymilk 1 3/4 cups unbleached white flour or whole wheat pastry flour, or a combination 1/4 cup wheat germ 2 teaspoons baking powder 1/2 teaspoon cinnamon 1/4 teaspoon ground cloves 1 heaping cup finely diced apple (with the peal) 1/2 cup raisins Preheat the oven to 350 degrees. In a mixing bowl, combine the beaten egg with the sugar until it dissolves. Add the oil and the milk and beat together until smooth. In another mixing bowl, mix together the flours, wheat germ, baking powder, and spices. Add the wet ingredients gradually to the dry and stir vigorously to form a smooth, stiff batter, then stir in the diced apple and raisins. Divide the batter evenly among 12 paper-lined muffin tins. Bake for 25 to 30 minutes, or until the muffins are golden and a toothpick inserted into the center of one tests clean.
