Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 1 10 oz package frozen spinach, thawed and squeezed dry 1 cup ricotta cheese 3/4 - 1 cup grated mozzarella cheese any other white cheese can also be added, couple slices of feta, some Parmesan, etc. 2 tsp Italian seasoning or to taste 3 chopped green onions, or 3 tablespoons finely chopped regular onion 1 egg 1 10 oz tube refrigerated pizza dough, or one batch from your bread machine all purpose flour as needed Mix all the filling ingredients together. Sprinkle the work surface with flour and roll out squares of dough. Put a couple big spoonfuls of filling on the square, fold the dough over and press the edges to seal. Cut a small slit in the top to let steam escape. Lightly spray a baking sheet with non-stick spray. Put calzones on the tray, bake about 15 minutes or until golden brown. We like them with spaghetti sauce on top, the kid likes them plain. Experiment! You really can't ruin these. We have started adding some sauteed vegetables, tomato, mushrooms, squash, and like them even better. Makes good leftovers.
