Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 VEGETARIAN SWEET AND SOUR CARROT DRESSING 3 cups fresh carrot juice 1 tablespoon fresh lemon juice 2 tablespoons rice wine vinegar 1 1/2 teaspoons soy sauce 1 1/2 teaspoons vegetable oil 3 drops of hot chili oil 2 tablespoons minced scallion salt and pepper to taste In a small saucepan, bring the carrot and lemon juice to a boil over moderate heat. Cook until the solids separate from the liquid. This should take about 5 minutes. Strain this into a bowl. Return the juice to the pan and boil again over a moderate heat for about 20 minutes, allowing it to cook down. Transfer this to a bowl and allow to cool somewhat. Whisk in the vinegar, soy sauce, vegetable oil, and chili oil. Salt and pepper to taste. Just before serving, whisk in the scallions.
