Vegetarian Breakfast Potato and Pepper Saute

 

6 C. red skin potatoes, washed, unpeeled, and diced

2 C. onions, diced

1 1/2 C. green pepper, de-stemmed, deseeded, and diced

1 1/2 C. red pepper, de-stemmed, deseeded, and diced

2 T. safflower oil

1 1/2 T. garlic, minced

1/4 C. freshly chopped parsley

2 T. freshly chopped thyme

1/2 t. salt

1/4 t. pepper

 

In a large non-stick skillet, saute the potatoes, onion,

and both peppers in the safflower oil for 7-10 minutes.

When the potatoes are tender and slightly browned, add the

garlic, and saute an additional 2 minutes. Add the

remaining ingredients and saute an additional 2 minutes.

Taste and adjust seasonings as needed.

Makes 4 to 6 servings.

We like our potatoes brown and crispy which doesn't seem to

happen in 7-10 min. We often microwave the potatoes first,

not so they are mushy but just where they are beginning to

get soft. You can even do this the night before.
