Guest guest Posted May 6, 2001 Report Share Posted May 6, 2001 Vegetarian, Low-Fat No-Fry French Fries 2 lbs. large baking potatoes, scrubbed* 1 tsp. olive or vegetable oil 1 large garlic clove, minced 1 tsp. salt 1/4 tsp. coarsely ground black pepper Preheat oven to 450 F. Line jelly-roll pan with foil. Spray foil generously with vegetable cooking spray. Cut each potato lengthwise into 1/2-inch wide slices; cut each slice into 1/2-inch wide strips. Toss potatoes in jelly-roll pan with oil, garlic, salt and pepper to coat well. Bake 40 to 45 minutes, tossing once or twice, until potatoes are crisp and golden. Serve immediately. *Note; For sweet potatoes: Prepare 2 pounds sweet potatoes as directed above, except bake 35 to 40 minutes, turning once. Makes 6 servings.
