Guest guest Posted May 3, 2001 Report Share Posted May 3, 2001 VEGETARIAN, DIABETIC, LOW-FAT TANGY AVOCADO SALAD (no exchanges) 1/4 cup fat-free French dressing 1/2 teaspoon salt 1/4 teaspoon pepper 1 clove garlic, crushed 4 spinach leaves 2 cups cauliflower flowerets 1 avocado, sliced Lemon juice Combine dressing, salt, pepper, and garlic. Wash spinach leaves well; drain and dry. Remove white stem; break into bite-size pieces. Combine spinach and cauliflower in a salad bowl. Add dressing; toss. Dip avocado slices in lemon juice; add to salad. Toss gently. Makes 4 servings. Calories...113...Fat...0.1 g...Protein...4 g...Carbs...10 g... Sodium...548 mg...Fiber...4 g.
