If you won't have fire, you'll be limited to things like trail mix. If you do get the stove working, I would suggest pasta. Are you going to be backpacking, or will you be pulling up to the campsite in your car? Also, this website http://www.nursehealer.com/Recipes.htm?clkd=iwm has links for various camping recipes (scroll down the page).Many have vegetarian recipes, some vegan, and you could probably change a few so they are vegan. Anyway....here is a pasta recipe. 1lb dry pasta (your choice) 2 handfuls (or more!) dry mushrooms 2 handfuls (or more) sun-dried tomatoes 2-3 Tbsp olive oil 3 Tbsp pine nuts Soak dried mushrooms & tomatoes in warm water for 10 min. Meanwhile cook pasta & drain. When pasta is done, add re-hydrated tomatoes & mushrooms (Discard water). Toss in olive oil to taste. Top with pine nuts. You can also add parmesan cheese (or vegan cheese) and any herbs you like, fresh or dry to taste. Enjoy! Guest guest Posted May 4, 2001 Report Share Posted May 4, 2001 Just a quick note about cooking pasta while camping. One year we did this and used the water from the spicket at a camp ground. We were all set to eat our delicious looking pasta dish but one bite and it was in the garbage!!! The water, which we hadn't been drinking because it tasted so bad, had ruined the pasta. The entire dish tasted like that bad water! Ugh! So...it was PBJs for dinner that night. Just wanted to add the little note - make sure that the water you cook your pasta in tastes good enough to drink or you will ruin your pasta! I have one of those Brita water filter pitchers.....I just had a though - maybe that would be a good way to filter water a camp ground. Has anyone ever tried that????? I'd be curious to know how well it works. I always make sure to take drinking water with when we go camping. I use a Brita pitcher at home and I love it. I've never tried it with camp water though.
