Guest guest Posted April 19, 2001 Report Share Posted April 19, 2001 HALLOUMI AND TOMATO SALAD PITTA Pitta breads freeze well and are easy to separate, making this a convenient hot snack for one. Grill the halloumi cheese until just golden and eat it immediately as it becomes chewy when it cools. Take care when seasoning the salad as the cheese can be salty. 2 cos lettuce leaves, shredded 1 plum tomato, sliced 1 thin slice sweet onion, separated into rings 1 sprig fresh mint, chopped 1 tsp olive oil 3 thick slices halloumi cheese 1 pitta bread seasoning Preheat the grill to high. Put the lettuce, tomato slices, onion rings and mint in a bowl and toss together with the olive oil and the seasoning. Place the halloumi cheese on a baking sheet and grill for about 2 minutes until turning golden, then turn over and grill for a further minute. Grill the pitta pocket for a few seconds on each side until it puffs open. Tuck the cheese and salad inside the pitta and eat immediately.
