Guest guest Posted April 4, 2001 Report Share Posted April 4, 2001 Vegetarian Tofu Spread 1/2 c. water 1 tbsp. tapioca 1/2 lb. tofu 1/4 c. cashews 3 tbsps. pimento, optional 3 tbsps. lemon juice 1/4 tsp. dill weed 1/2 tsp. onion powder 3/4 tsp. salt Blend all ingredients till smooth. Bring to a boil & simmer gently, stirring, for 5 to 10 minutes or until the toapioca is clear. Chill. Use as a dip or as a spread on bread or crackers. Makes 4 servings.
