Guest guest Posted March 25, 2001 Report Share Posted March 25, 2001 Quick Mushroom Pizza Serves 4 1 1/2 T olive oil 8 oz cremini or button mushrooms (you can use all button mushrooms if you can't get cremini)thinly sliced 6 oz Shitake mushroom, stemmed and thinly sliced 2 med. cloves garlic, minced 1/2 t dried thyme 1/2 t salt 1 cup drained jarred roasted red peppers, cut into strips yellow cornmeal for sprinkling 1 lb. refrigerated pizza dough 2 T grated parmesan cheese (optional) Preheat oven to 500 degrees F. In lg. nonstick skillet, heat 1 T oil over med. heat. Add mushrooms, garlic, thyme, and salt and cook, stirring often, until mushrooms are tender, 6 min. Stir in peppers. Remove from heat and set aside. Sprinkle lg. baking sheet with cornmeal. Place pizza dough on work surface. Roll and stretch dough into 11" circle; transfer to prepared sheet. Spoon mushroom mixture over dough, leaving 1" border. Sprinkle with Parmesan if desired. Season with ground pepper to taste. Bake about 11 min.
