Vegetarian Carrot Potato Soup

 

1 stick butter

1/2 cup onions, chopped

3 potatoes, peeled and cubed

1 cup carrots, peeled and sliced

3 cups water

Salt and pepper to taste

 

Melt the butter in a saucepan and saute the onions. Add the vegetables and

water--the water should just barely cover the veggies. Let simmer until the

veggies are cooked and then let it cool. Run the mixture through a food

processor until a smooth consistency is achieved. Heat the soup well and

serve.
