Guest guest Posted March 14, 2001 Report Share Posted March 14, 2001 Vegetarian, Potato Onion & Tomato Gratin Non stick cooking spray 1 lb. potatoes, peeled and thinly sliced 1 medium onion, thinly sliced 1 tsp. lemon thyme Salt and freshly ground black pepper to taste A dash of nutmeg 1/2 lb. tomatoes, thinly sliced 1/2 C. dry white wine, or vegetable stock 1/3 C. goat cheese, crumbled 6 Tbs. Parmesan cheese Spray a 10 inch baking dish with the cooking spray. Place half the potatoes in a layer to cover the bottom of the dish, place half the onions over the potatoes. Season with the thyme, nutmeg, salt, and pepper, then cover with half the tomatoes. Repeat this process placing the remaining potatoes, onions, and tomatoes in the pan. Add the wine or stock to the dish, and sprinkle the top with the goat cheese and Parmesan.
