Guest guest Posted March 6, 2001 Report Share Posted March 6, 2001 Garlic Soup 2 heads of garlic, peeled & minced 2 tbsps. onion, chopped 2 tbsps. olive oil 2 tbsps. tomato paste 4 cs. stock salt & pepper Combine garlic & onion in a bowl. Heat oil in a pot. Add garlic & onion & saute till soft. Do not brown. Add tomato paste. After a few minutes, stir in stock, salt & pepper. Simmer for 15 minutes. Serve with croutons if desired.
