Guest guest Posted March 11, 2001 Report Share Posted March 11, 2001 Sweet and Sour Cucumber Salad Serves 4 2/3 c distilled white vinegar 2/3 c water 1/2 c sugar pinch of salt 1 lg. cucumber, peeled 3-4 T freshly chopped cilantro 1/2 small red onion, chopped 1/3 c chopped salted peanuts Mix vinegar, water, sugar, salt in sm. saucepan and bring to boil, stirring to dissolve sugar. Allow mixture to reduce and thicken slightly, about 10 min, it should reduce by 1/2. Remove pan from heat and set aside to cool. Meanwhile, cut cucumbers into quarters, slice thinly across and put into bowl. Once dressing has cooled, add to bowl with half chop cilantro and onion. Stir together well.
