Guest guest Posted February 28, 2001 Report Share Posted February 28, 2001 CARROT POTATO SOUP This is a delicious soup that really hits the spot on one of those really cold winter nights. I like to keep it fairly thick, but you can thin it with a little water or milk. 1 stick butter 1/2 cup onions, chopped 3 potatoes, peeled and cubed 1 cup carrots, peeled and sliced 3 cups water Salt and pepper to taste Melt the butter in a saucepan and sauté the onions. Add the vegetables and water--the water should just barely cover the veggies. Let simmer until the veggies are cooked and then let it cool.
