Honey Mustard

From The Vegetarian Sandwich Cookbook by Paulette Mitchell

 

1/2 c dry mustard

1/2 c white rice vinegar

1 egg (or substitute)

1/3 c honey

 

Combine mustard and vinegar in small bowl;

whisk to remove lumps. Cover and let stand at

least 4 hrs.

 

Pour mustard mixture into blender, add egg and

honey. Blend until smooth.

 

In a double boiler over simmering water cook mustard

mixture, whisking constantly, until mixture thickens to

a pudding consistency, about 5 min. Remove top pan from

double boiler and let cool for 5 min., stirring occas. Pour

into sterilized glass jar, cover, refrigerate.
