Guest guest Posted February 25, 2001 Report Share Posted February 25, 2001 2 C water 2 sm. carrots, sliced 1 med. potato, cubed 3/4 c fresh or frozen peas 1 c fresh cut or frozen green beans 1/4 sm. cauliflower, separated into flowerets 2 oz. fresh spinach, cut up 2 cups milk (or milk substitute) 2 T flour 1/4 heavy cream (or substitute) 1 1/2 t salt 1/8 t pepper chopped fresh dill week or parsley Heat water, carrots, potato, peas, beans, and cauliflower to boiling in 3 qt. pan; reduce heat. Cover and simmer until veggies are almost tender, 10-15 min. Add spinach; cook uncovered 1 min. Mix 1/4 c of the milk (or substitute) and flour; stir gradually into veggie mixture. Boil and stir for 1 min. Stir in remaining milk (or substitute), whipping cream (or substitute), s & p. Heat just until hot. Garnish with herbs.
