Guest guest Posted February 24, 2001 Report Share Posted February 24, 2001 Vegetarian Low-Fat Green (Brown) Lentils With Rice And Onions (high fiber) 1 Cup lentils, rinsed & picked over 1 Tablespoons vegetable oil 2 Medium onions, thinly sliced 1 Cup long-grain rice, rinsed 6 Cups water 1 1/2 Cups vegetable stock or water salt to taste pepper to taste Place lentils in saucepan with 6 cups water; bring to a boil. Simmer gently 20-25 minutes until lentils are tender. Drain well and reserve. Meanwhile, heat oil in large, deep skillet; add onions. Cook onions until they're brown and crisp. Remove; reserve half the onions. Add rice to remaining onions in pan and cook, stirring, to combine rice with onions, about 3 minutes. Add water or stock, salt and pepper (if stock is unseasoned); bring to a boil. Cover and cook rice 10 minutes for white. Add [cooked] lentils; cover and cook another 10 minutes. Season to taste.
