Guest guest Posted February 23, 2001 Report Share Posted February 23, 2001 Vegetarian Tomatoes Stuffed With Chinese Vegetables Seasonings. 4 Tomatoes 1 Cup onion, chopped 1 Tablespoon gingerroot, grated 1 teaspoon garlic clove, crushed 1 Tablespoon vegetable oil 1 Package plastic wrap 19 Ounces canned black beans 8 Ounces water chestnuts, sliced 1/4 Teaspoon cayenne pepper 1 1/2 Tablespoons red wine vinegar 1 1/2 Tablespoons soy sauce 3 Cups cabbage, shredded Cut a 1/4 inch slice off the top of the tomatoes. Scoop out the pulp, leaving a 1/4 inch thick shell, set aside. Chop the pulp. In a microwave-safe dish, combine chopped onion, grated ginger root, crushed garlic clove and oil; cover with plastic wrap. Microwave on high heat for 3 minutes, or until onion is tender-crisp. Add canned black beans, (rinsed and drained), sliced water chestnuts, cayenne pepper, red wine vinegar, soy sauce, and the reserved tomato pulp. Cover and microwave on high for 2 minutes or until hot. Fill the tomato shells with the bean mixture.
