Guest guest Posted February 22, 2001 Report Share Posted February 22, 2001 Vegetarian Tofu Mayonnaise 1 c. drained, mashed tofu 2 tbsp. vinegar 1 tsp. dijon mustard 1 tsp. soy sauce 1 tsp. dried parsley 1/2 tsp. garlic powder 1/2 tsp. salt Combine ingredients in container of blender or food processor. Process about 1 min until smooth or beat ingredients together. Place in a screw-top jar. Store, covered in the refrigerator up to 4 weeks. Makes 1 1/2 cups.
