Guest guest Posted February 20, 2001 Report Share Posted February 20, 2001 Vegan Roasted Tomato Spread 5 C. red or yellow tomatoes roasted 1/2 C. sweet onions roasted 2 tsp. marjoram Coarsely chop the roasted tomatoes and onions the mixture will have cooked down to about 3 cups with a thick and pretty dry consistency. If too moist, roast at 450° for another 10 minutes stirring frequently. Combine tomato mixture with 2 teaspoons minced fresh marjoram leaves. This spread is wonderful served with fresh vegetables; red and yellow peppers, carrots, celery, cucumbers, crackers, toasted baguettes. Best served at room temperature.
